Blueberry Muffins

These blueberry muffins are a great way to start your day! Grab one when your on the go or sat at home.
6 oz (175g) self raising flour
2 oz (50g) soft margarine
2 oz (50g) Caster sugar
2 medium eggs
4 tbsp milk
1/2 tsp vanilla essence
5 oz (150g) fresh blueberries
Crushed sugar

1. Pre-heat oven to 200 degrees. Grease a patty tin or use muffin cases.
2 .Place flour in a dish and mash the margarine in using a fork. Mix in the sugar, eggs, milk and essence then beat to a smooth consistency. Carefully stir in most of the blueberries reserve some for the top so they don’t all sink to the bottom.
3. Spoon the mixture into the muffin cases equally. Sprinkle with crushed sugar and bake for 20 -25 minutes until brown and we’ll risen. Cool on wire rack after a few minutes of standing.
πŸ’­ Makes a batch of 6 big muffins or 9 smaller ones. Will keep for 3-5 days in a air tight container in the fridge.
