Mini Cherry & White Chocolate Loaves


Hey cupcakes, I’m going to be doing a couple of bake sales to raise money for charities over the next month or so. While I was looking for some inspiration, I came across a version of these cute Cherry cakes that I then tweaked slightly. Not only do they look the part but they make a great little bake to gift wrap and sell on to friends and family. If you’re interested in making this mini loaf recipe or doing your own bake sale for charity please read on.
Makes 5

4oz self raising flour
Pinch of salt
4oz Caster sugar
4oz margarine/butter
3 eggs
1/2 tsp vanilla extract
2oz dried cherries
2 tbsp white chocolate stars (tesco)
Royal icing (icing sugar & warm water to decorate)

1 Preheat oven to 180 degrees Celsius/fan oven 160 degrees Celsius/gas mark 4.
2 Put the flour and the salt into a bowl.

Add the sugar, fat, eggs and vanilla extract.
Use a wooden spoon to beat the mixture together for a couple of minutes until creamy and smooth.

3 Fold in the cherries
& white chocolate.


Share the mix equally between the 5 mini loaf cases. (I got 10 for Β£2 from the asda)

4 Bake for 20-25 minutes They will look ready after 15 mins but please be patient and wait! When there done they will be golden and the tops will spring back when touched lightly.

5 Cool the cakes completely before decorating with a drizzle of icing.
